1 jalapeno pepper, seeded and minced
3 cloves garlic, minced
1 teaspoon kosher salt
1 teaspoon fresh ground black pepper
1/2 cup olive oil
2 limes, juiced
1 orange, juiced
2 tablespoons white vinegar
2 pounds flank steak, trimmed of fat
salt and ground black pepper to taste


Combine 1 teaspoon black pepper, kosher salt, garlic, and
jalapeno in a mortar. Grind mixture until a paste is formed.

Pour vinegar, orange juice, and lime juice into a lidded container
or glass bottle; add garlic mixture and shake well to combine.

Arrange steak in a shallow bowl; pour in marinade. Cover the
bowl with plastic wrap and chill for 4 to 6 minutes until flavors
have been absorbed by the steak.

Turn grill to medium heat and lightly grease the grate.

Transfer the steak from the marinade to a cutting board. Sprinkle
with pepper and salt to season and cut steak into thin strips across
the grain.

Grill for about 5 minutes on each side until the center is light pink
and the outside is slightly charred.
