Smoky Sweet Potato Tempeh Scramble

Preparation time: 17 minutes Cooking Time 13 minutes Servings 8

Ingredients

2 tablespoons olive oil

1 small sweet potato, finely diced

1 small onion, diced

2 garlic cloves, minced

8 oz. package tempeh, crumbled

1 small red bell pepper, diced

1 tablespoon soy sauce

1 tablespoon ground cumin

1 tablespoon smoked paprika

1 tablespoon maple syrup

Juice of ½ lemon

1 avocado, sliced

2 scallions, chopped

4 tortillas

2 tbsp. Hot sauce

Directions:

Place a skillet over a medium heat and add the oil.
Add the sweet potato and Cooking Time: for five minutes until getting soft.
Add the onion and Cooking Time: for another five minutes until soft. Stir through the garlic and Cooking Time: for a minute. Add the tempeh, pepper, soy, cumin, paprika, maple and lemon juice and Cooking Time: for two more minutes. Serve with the optional extras then enjoy.
