Sesame Tofu

1 cup sweet potato, peeled, diced
2 teaspoons sesame oil, toasted
2 tablespoons sesame seeds
1 carrot, peeled, cut diagonally into ½-inch pieces
1/3 cup vegetable stock
3 garlic cloves, minced
2 cups snow peas
1 lb. tofu, extra firm, cut into 1-inch cubes
2 tablespoons of sweet & spicy red pepper sauce
2 tablespoons of tamari
2 tablespoons tahini
2 cups yellow onion, sliced
2 tablespoons scallion, chopped
1 tablespoon rice vinegar


1. Set your instant pot to the sauté mode, and add sesame oil and heat

2. Add in onion, sweet potato, carrot and sauté for 2-minutes.

3. Add the garlic and tablespoon of sesame seeds, and sauté for an
additional 2-minutes.

4. Add in the tofu, tamari, stock, and vinegar.

5. Close and secure the lid of pot, and set to Manual on high with a
cook time of 3-minutes.

6. When the cook time is completed, release the pressure using quickrelease.

7. Add in the peas and close the lid again, and cook for another 3-
minutes, then use the quick-release again.

8. Stir in the tahini and pepper sauce.

9. Use the leftover sesame seeds as a garnish along with green onions
chopped. Serve warm.
