Greek Garbanzo Beans On Toast

Preparation time: 30 minutes Cooking Time 5 minutes Servings 2


2 tablespoons olive oil

3 small shallots, finely diced

2 large garlic cloves, finely diced

¼ teaspoon smoked paprika

½ teaspoon sweet paprika

½ teaspoon cinnamon

½ teaspoon salt

½-1 teaspoon sugar, to taste

Black pepper, to taste

1 x 6 oz. can peel plum tomatoes

2 cups cooked garbanzo beans

4 slices of crusty bread, toasted

Fresh parsley and dill

Pitted Kalamata olives


Pop a skillet over a medium heat and add the oil.
Add the shallots to the pan and Cooking Time: for five minutes until soft.
Add the garlic and Cooking Time: for another minute then add the other spices to the pan.
Stir well then add the tomatoes.
Turn down the heat and simmer on low until the sauce thickens.
Add the garbanzo beans and warm through. Season with the sugar, salt and pepper then serve and enjoy. Nutrition:
